Vegetarian BBQ Potato Skins

Here is what we've discovered: you just cannot go wrong with BBQ. This recipe was inspired by Woodranch, a delicious restaurant in Southern California. The original has BBQ chicken in it, but we're cheap college students sooo we went vegetarian. Here's what you'll need:

3-4 potatoes
1 handful of cilantro
1/4 c. chopped red onion
BBQ sauce
shredded cheese
chicken (optional)


First things first, wash your potatoes and slice them in half. Then take a large spoon and carve out the potato so there is a shallow area for sauce. This part is really important because otherwise the skins taste a little too....potatoey.




























 Next, pop these guys in the oven at 375 for about 10-15 minutes.



Coat each piece with BBQ sauce, I usually use a rubber spatula. Then add the onions and a little bit of cilantro, but save some! It makes a beautiful garnish. Next, add the cheeeeeese. And lots of it :) Bake for 7 minutes, then add the rest of the cilantro and bake for an additional 5 minutes. Viola! Dip them in ranch or sour cream with chives, depending on your preference. Enjoy!
